Ginger miso salmon


 
Walkthrough
First step in this recipe is to make the marinade. Using a zester grate the ginger and the garlic clove into a mixing bowl. You could chop these items but grating them will save you a significant amount of time. Then add the green onions, cilantro, soy sauce, red miso, and honey to the bowl and mix together. Place the salmon flesh side down in the marinade for about an hour. When you remove it from the marinade rinse the marinade off the salmon with cold water then pat it dry with paper towels.
When you’re ready to cook, pre heat a cast iron skillet to medium high heat then add a small amount of grape seed oil to the skillet. I use grape seed oil because it has a neutral flavor and a high smoke point. Olive oil will smoke a lot when you’re using it for high temperature searing and may also taste burnt. Place the salmon skin side down in the hot pan and cook for 6 minutes then transfer the entire skillet into the oven under the broiler on the middle rack for 6 more minutes or until the internal temperature reaches 140 degrees. Remove the salmon from the skillet when the salmon is finished cooking. Brush a small amount of honey on the salmon making sure to cover all the edges then sprinkle cilantro, green onions, and sesame seeds on top.

  • Cook the salmon in one large piece to ensure even cooking instead of worrying if every piece is cooked
  • Check the salmon often when it’s under the broiler, if it starts to get dark remove the skillet from the oven and finish cooking on the stovetop
Ingredients
12oz Salmon
1 tbsp Ginger, freshly grated
2 garlic cloves, freshly grated
1 Green onion, thinly sliced
1/4 cup Cilantro, chopped
1/4 cup Soy sauce
1 tbsp Red miso
1 tbsp Honey
Additional honey for serving
Grape seed oil for searing
Directions
  1. To make the marinade mix together the ginger, garlic, green onion, cilantro, soy sauce, red miso, and honey together in a large bowl
  2. Place salmon flesh side down in the marinade for 1 hour occasionally basting the skin side with marinade
  3. After 1 hour rinse the marinade off of the salmon and pat dry with paper towels
  4. Pre heat a cast iron skillet to medium high heat then pour a small amount of grape seed oil into the pan
  5. Turn the broiler in the oven on high
  6. Place salmon skin side down in the pan first, cook for about 6 minutes, then place the entire pan in the oven for about 6 more minutes or until the internal temperature of the salmon is 140 degrees
  7. Garnish with honey, green onions, cilantro, and toasted sesame seeds
