I made this one with leftover stuff hanging out in the fridge. The best recipes are usually made this way. It’s also a great way to put all of your cooking knowledge to the test. This proves that less is actually more sometimes. These shrimp are packed with concentrated tomato flavor. Crushed red pepper flakes round out the acidity and sweetness of the tomato paste. Lets jump into the recipe.

1lb shrimp, peeled and deveined
3 oz tomato paste
1/4 cup extra virgin olive oil
3 garlic cloves, minced
1 tbsp crushed red pepper flakes
1 tsp salt
Chives for garnish
- Mix together the tomato paste, extra virgin olive oil, garlic, crushed red pepper flakes, and salt
- Add the shrimp to the marinade. Mix to coat all of the shrimp. Place marinating shrimp in the refrigerator for 30 minutes.
- Skewer the shrimp then place the skewers across a half sheet pan to elevate them
- Place the sheet pan under the broiler for 3-7 minutes or until shrimp register a temperature of 135 degrees
- Garnish with chives
