Tequila lime mahi mahi tacos with pineapple salsa

I was in love with these tacos and debated on making the fish a recipe all on its own. But I just couldn’t myself to separate them. All of the flavors and textures combined create a great eating experience packed with explosive flavor. The fish is heavily spiced but it balances really well with the sweet and spicy salsa. Let’s jump into the recipe!


Tequila lime mahi mahi:
1lb Mahi mahi
1 Lime, juiced
2oz Tequila
1 tsp Cumin
2 tsp Coriander
1 tsp olive oil

Pineapple salsa:
1/2 Pineapple, small dice
1 Mango, small dice
1/2 Red onion, small dice
1 Serrano with seeds, thinly sliced
1/2 Avocado, small dice
10 Cherry tomatoes, small dice
1 Lime, juiced
1/4 cup Cilantro, finely diced
Salt to taste

Additional ingredients:


  1. Start by marinating the mahi mahi in the tequila and lime juice
  2. Do not marinade for more than 20 mins, the tequila and lime juice start to cook the fish
  3. Meanwhile, cut all of the ingredients for the pineapple salsa then mix them together
  4. Preheat the oven to 450 degrees
  5. Remove the fish from the marinade, pat dry with a paper towel
  6. Coat the top of the fish with olive oil then dust with the cumin and coriander
  7. Bake the fish for 12-15 minutes or until it reaches 135 degrees internal temperature
  8. Char the tortillas over a open flame, flake some of the mahi down the center, top with pineapple salsa and cilantro
