Sundae pancakes

The only thing better than a stack of pancakes is a stack of pancakes topped off with a ice cream sundae. I don’t think I can ever go back to eating a pancake without an entire sundae on top. All jokes aside the really cool thing I took away from this was using the melted ice cream instead of milk or sugar. Any kind of ice cream could be used so I’m sure some really cool flavor combinations can be made.


1 1/4 cups All purpose flour
1 tbsp baking powder
2 tsp salt
1 1/2 cups Vanilla ice cream, melted
1/2 cup Sprinkles
1 egg, beaten
4 tbsp butter, melted
8 oz heavy whipping cream
2 tsp powder sugar
Vanilla ice cream for topping
Sprinkles for topping
Chocolate syrup for topping
Maraschino cherries for topping


  1. Whisk together flour, baking powder, and salt in a mixing bowl
  2. In a separate mixing bowl whisk together the melted ice cream, egg, and butter
  3. Mix the dry ingredient bowl into the wet ingredient bowl then fold the sprinkles into the batter
  4. Pre heat a cast iron skillet to medium heat. Use non stick spray for extra non stick protection, then drop 1/2 cup of pancake batter into the pan
  5. When bubbles start to rise through the pancakes flip then cook for about 60 more seconds
  6. Top pancakes with scoops of vanilla ice cream, whipped cream, sprinkles, chocolate syrup, and maraschino cherries

Whipped cream (Optional. Could also buy in a can.)
1. In a mixing bowl whisk together the heavy whipping cream and powdered sugar until stiff peaks are formed
