Italian focaccia sandwich

All this warm weather lately has me craving a nice Italian sandwich loaded with meats and veggies. I also happen to have an excessive amount of focaccia laying around. After a trip to the grocery store this monstrosity was built. There aren’t exact amounts because everyone likes certain ingredients more than other so build this with your favorites in mind. Let’s check out what’s piled on the sandwich.


Focaccia bread
Provolone cheese
Capicola aka gabagool
Tomato slices
Iceberg lettuce, julienned
Red onion, julienned
Extra virgin olive oil
Red wine vinega


  1. Start by marinating the onions with a few glugs of red wine vinegar and a pinch of salt, toss to combine
  2. Toss the iceberg lettuce, a pinch of oregano, and about one tablespoon of olive oil
  3. Spread mayo on both sides of the focaccia
  4. Lay down a few slices of cheese
  5. Layer the meats
  6. Top with tomatoes, marinated onions, and iceberg lettuce
  7. Finish by placing the second piece of bread on the top layer then slicing down the center
  8. Enjoy!
